Broccoli & Cheese Oats with Steamed Edamame

Of the great food combinations in foodom, there are a few important ones that stand out.

peanut butter and jelly chocolate…

Cheerios and milk…

tortilla chips and sour cream…

tomatoes and sea salt…

spinach and smoothies…

oatmeal and cheese…

Many of you may know of my affinity for taking the sweet out of traditionally sweet breakfasts. This is especially true when it comes to my favorite breakfast: Savory Oats.

Broccoli & Cheese Oats with Steamed Edamame

  • 1/2 cup slow-cook oats
  • 1 cup water
  • 1/4 cup frozen chopped broccoli
  • 1 ounce favorite cheese
  • 1/4 cup pre-steamed edamame
  • Sea salt to taste

Directions

Cook oats per box directions and turn heat down to low-medium. Add frozen broccoli and stir until broccoli is thawed and cooked through. Stir in cheese until melted and combined throughout the oats. Remove from heat. Add edamame and sea salt, and serve.

These oats, in all their cheesy, hearty goodness, taste much more like a meal than their traditional dessert wearing a breakfast Halloween costume cousin. And, in fact, this incredible combination of flavors made my husband an oatmeal eater, and that is no small feat. He had long avoided oats, but now looks forward to them each time I cook them.He prefers his with sausage or a poached egg in place of the edamame. To each his own!
